Clumps of slender green leaves (like a jagged grass) with a crunchy texture. Also known as Erba stella or Buckshorn plantain. Cold tolerant, and a traditional winter salad in Italy.In Tuscany this wild plant is regarded highly as an important ingredient of many a salad. It is quite small and sports feathered leaves, which are decorative as well as tasty. When wetted it becomes gelatinous and serves as an efficient laxative.

Some people blanch the leaves in boiling water for a few seconds before using them in salads in order to make them more tender.
Use young leaves in salads or as a garnish. Has a flavour similar to parsley but a little nuttier.
