Leaf beet (Beta vulgaris subsp. vulgaris var. cicla) 'Rhubarb Chard' is an attractive and nutritious vegetable, valued for its vibrant appearance and versatile culinary uses. The distinctive feature of this variety is its bright red leaf stalks and deep green leaves, making it not only a functional vegetable but also an ornamental plant in the garden.

Benefits and Usage

  • Leaf beet is rich in vitamins (A, C, K), minerals (iron, magnesium, potassium), and fiber.
  • It is used in salads, soups, stews, and smoothies. It can be cooked similarly to spinach or used as a separate side dish.
  • Young leaves are great raw in salads, while larger leaves are better cooked. The red stalks can be prepared similarly to asparagus.

Growing Information

  1. Sowing

    • Leaf beet is cold-hardy and grows well both in early spring and fall.
    • Sowing time: From March to June (direct sowing in the garden) and July for a second harvest in the fall.
    • Seed preparation: Soak seeds for 12 hours before sowing to speed up germination.
    • Sowing depth: 1–2 cm.
    • Row spacing: 30–40 cm, plant spacing 15–20 cm.
  2. Growing Conditions

    • Sunlight: Prefers sunny or partly sunny spots.
    • Soil: Best grown in well-drained, fertile soil. The pH should be between 6.0 and 7.5.
    • Watering: Keep the soil evenly moist, especially during germination.
  3. Care

    • Regularly weed and loosen the soil.
    • Fertilize once or twice during the growing season with a nitrogen-rich fertilizer to encourage leaf growth.
    • Harvest leaves progressively, starting from the outermost ones. Leave the central growing point intact so the plant continues to produce new leaves.
  4. Harvesting

    • First leaves can be harvested around 50–60 days after sowing.
    • Harvest regularly to encourage continuous growth of new leaves.
  5. Pests and Diseases

    • Common problems: Aphids, slugs, and soil-borne fungi.
    • Avoid over-watering and planting too densely to improve air circulation around the plants.
